Ingredients
- 1 T. milk
- 2 T. egg substitute
- 2 fish fillets
- 1/4 c. corn meal
- 2 T. Parmesan cheese
- 1 t. Creole seasoning
- Dash of thyme
- 1/2 T. butter, melted

Step 1
Preheat oven to 500 degrees. Coat a baking pan with vegetable spray.
Combine milk and egg substitute; set aside. Combine corn meal, Parmesan cheese and seasonings. Dip fish in milk mixture and then into crumbs. Place in prepared baking pan. Let stand for 15 minutes.
Sprinkle with remaining crumb mixture and drizzle with melted butter. Bake for 12-15 minutes. No need to turn fish.
