Hollow the mushrooms with a spoon, careful not to break them. lay them open side up on cookie sheet and drizzle with olive oil. Preheat the oven to 350*. Fill each mushroom with about a quarter of the chopped bacon or crumbled sausage. I also finely chop the mushroom stems and toss in with the meat after it is browned. Use grated Parmesan not fresh. Top each mushroom with cheese, making a mound on each one. Sprinkle the red pepper flakes and a little black pepper over the top of the mushrooms. No salt. Bake 15-20 minutes until the cheese is golden brown.
