Sausage Pecan Dressing

Ingredients
- 1/4 lb. butter
- 1 1/4 c. finely chopped onion
- 1 c. finely diced celery
- 1/2 c. chopped celery tops
- 1 1/2 t. thyme
- 1/2 lb. sausage
- 1 T. salt
- 1 1/2 t. ground pepper 6-8 c. coarse corn bread crumbs
- 3/4 c. Madeira or chicken broth
- 1 c. pecans

Preparation
Step 1
Melt butter and add butter, celery, celery tops and thyme; saute gently. Saute sausage in separate skillet. Add salt and pepper to the corn bread crumbs, then add crumbs to skillet with sauteed vegetables. Drain sausage. Add sausage and Madeira to sauteed vegetables. Put in more melted butter and some of rendered sausage fat if needed Taste for seasoning. Add pecans. Make enough stuffing for a 10 pound bird.
