Lemon Pudding Cake

Ingredients

  • 2/3 cup plus 1/2 cup sugar, divided
  • 2 tbsp butter
  • 1/4 cup milk
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/2 cup lemon juice, divided
  • 1 tbsp grated lemon rind

Preparation

Step 1

In a mixer cream together 2/3 cup sugar and butter. Stir in milk. In another bowl stir together flour, baking powder, baking soda and salt. Add to sugar mixture. Add 1/4 cup lemon juice and grated rind. Spoon into buttered 2-quart glass bowl.

In a small bowl combine remaining 1/2 cup sugar and remaining 1/4 cup lemon juice. Pour over batter. Pour 2/3 cup boiling water over the batter. Bake in 325 F oven for 30 minutes or until golden.
