Ingredients

  • 1 onion, cut into pieces
  • 2 stalks celery, sliced
  • 4 carrots, sliced
  • 4 or 5 potatoes cut into pieces
  • 1 can tomato paste
  • 1 head chicory or escarole lettuce, cut up
  • 1/2 cup grated cheese
  • 8-10 cups water
  • 1/2 tsp basil
  • 1/2 cup EVOO
  • 1 ham bone with meat, cured or fresh
  • 2 or 3 cloves garlic, chopped
  • Salt and pepper to taste
  • 1 tsp basil
  • 1/2 lb bubelline or small macaroni

Preparation

Step 1

1. Sauté onions, celery, carrots, and potatoes in olive oil until onions are translucent
2. Add water. Add ham bone. Add salt, pepper, garlic, tomato paste, and lettuce
3. Cook slowly for 1 1/2 hours
4. Add basil and macaroni last; continue to cook until al dente
5. Make up a mixture of EVOO, grated cheese and basil. Add to soup
