Ingredients
- 1 container (16 oz) fat-free ricotta cheese
- 1/3 cup confectioners' sugar
- 1 tbsp freshly grated orange zest
- 2 tsp freshly grated lemon zest
- 1 tsp freshly grated lime zest
- 1/2 tsp vanilla
- 3 cups semisweet chocolate chips-divided
- 12 large cannoli shells
Preparation
Step 1
In a medium bowl combine the ricotta, confectioners' sugar, orange zest, lemon, zest, lime zest, and vanilla. With an electric beater, whip until light and fluffy. gently fold in 2 1/2 cups of the chocolate chips, setting aside the remiaing 1/2 cup.
Spoon the filling into the cannoli shells. Melt the remaining chips and drizzle each cannoli with the melted chocolate.
