Baked Curry Acorn Squash

Ingredients

  • 3 acorn squash
  • 1 cup vegetable stock
  • 1 tsp curry powder
  • salt and pepper to taste

Preparation

Step 1

1. Preheat oven to 350F

2. Cut squash in half and remove seeds. Place squash in baking dish cut-side up and add stock. Sprinkle with curry powder, pepper and salt. Bake, covered, for 45 mins.

3, Uncover, baste with juices, and bake uncovered for 15 more minutes or until fork tender.
