Vegan cranberry bread

  • 2 C sifted white or whole wheat flour
  • 1 ener g replacer egg
  • 1 C fructose or sugar
  • 1 tsp grated orange peel
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/4 C vegan butter
  • 3/4 C orange juice
  • 1 1/2 C raisins
  • 1 1/2 C cranberries, chopped



Step 1

Preheat oven 350 degrees Prep/oil a 9x5x3 loaf pan
Stir flour, baking powder and baking soda and salt into a large bowl. Cut in butter until mixture is crumbly. Add egg replacer egg, orange peel and orange juice all at the same time. Stir just til mixture is evenly moist. Fold in raisins and cranberries. Spoon into oiled loaf pan and bake at 350 degrees for 1 hour & 10 minutes - or til a toothpick inserted into the center of the loaf comes out clean.
Remove from pan and cool on a wire rack.
