Black Bean Lasagna

Ingredients

  • 5 cans black beans
  • 10 T olive oil
  • 1 onion chopped
  • 8 garlic cloves, minced
  • 1 1/2 cups red wine
  • 4 cups tomato paste
  • 4 cups stewed tomatoes
  • 2 t sugar
  • 2 t oregano
  • 4 cups ricotta
  • 2 eggs beaten
  • 1/2 cup cilantro
  • 2 cups parm cheese
  • 18 lasagna noodles
  • 2 lbs grated mozzarella cheese

Preparation

Step 1

1. Puree 2 cans of beans with 4 T olive oil and set aside.

2. saute onion and garlic in 6 T oil till softened. add wine and boil till wine is almost gone. then add tomato paste, tomatoes, sugar, oregano and other cans of black beans. simmer 1 hours, stirring occasionally. don't boil.

3. in bowl combine ricotta, egg, cilantro, 1 cup parm. cook noodles, drain and rinse.

4. oil dishes. arrange 3 noodles on bottom:
1/2 ricotta mix
1/3 tomato bean sauce
1/3 mozzarella
sprinkle with parm
3 more noodles
pureed bean mixture (all)
1/3 tomato bean sauce
1/3 mozzarella
more parmesan
3 more noodles
rest of ricotta
rest of tomato bean sauce
rest of mozzarella
top with parm

5. bake in a 375 degree oven for 30-35 minutes.
