Ingredients
- 1-28 oz. pkg. frozen tater tots
- 1/2 lb. bacon, thick cut (5-6 slices)
- 1 small white onion, chopped
- 1 orange bell pepper, cut into 1/4" pieces
- 1 clove garlic, minced
- 1-28 oz. can crushed tomatoes
- 1 T smoked paprika
- 1/2 t kosher salt, divided
- 6 eggs
- 4 oz. feta cheese, crumbled (1 c)
- 1/4 c thinly sliced scallions
- 1/4 t pepper
Preparation
Step 1
Preheat oven to 375. Prepare tots according to package.
Cook bacon, reserve 2 tablespoons of grease and chop.
Add onion to skillet with drippings and cook over medium, about 4 minutes. Add bell pepper and cook, stirring occasionally until slightly softened, about 4 minutes. Add garlic and cook one minute. Stir in tomatoes, paprika, half of the bacon and 1/4 teaspoon salt. Bring to a boil. Cook, stirring occasionally until thickened, about 5 minutes. Remove from heat. Evenly top tomato mixture with tots, without stirring them in.
Using back of spoon, make 6 wells in mixture and crack one egg into each well. Sprinkle with cheese. Bake until eggs reach desired doneness, about 15 minutes for medium or 20 minutes for hard.
Sprinkle with scallions, pepper, remaining bacon and 1/4 teaspoon of salt.
