Cabbage and Cheese Loaf

Ingredients

  • 3 tbsp unsalted butter
  • 2 tbsp canola oil
  • 1/4 cup diced onion
  • 1 head cabbage (2-3 lbs.)
  • salt/pepper to taste
  • 3 eggs
  • 1/2 cup heavy cream
  • 1 cup grated cheddar cheese
  • 3/4 cup fresh bread crumbs

Step 1

Preheat oven to 375 degrees. Grease a standard loaf pan, 5x9x3 inches. Wash, dry and quarter the cabbage then slice into 1/4 inch strips.
In a large saute pan, heat butter and oil. Add the onion and saute until translucent. Add cabbage and stir well to coat with butter and oil.
Cover and simmer until cabbage is wilted and has released its liquid. Remove the cover and cook over medium to high heat until the moisture in the pan has evaporated. Remove the pan from the heat and season the cabbage to taste with salt and pepper.
In a medium mixing bowl, beat together eggs and cream. Add the cheese and 1/4 cup of the bread crumbs. Mix gently and pour into the loaf pan. Press remaining crumbs on top. Place the pan on middle rack of oven and bake for 40-45 mins. The loaf should be quite firm to touch and golden brown on top.
Let rest for 20 mins. before slicing.
