Ingredients

  • 1 lb. plum tomatoes, cored
  • 1-1/2 kosher salt
  • 1/4 c finely chopped red onion
  • 1 T chopped fresh cilantro
  • 1 T lime juice
  • 1 small garlic clove, minced
  • 1/8 t pepper
  • 1/2-1 jalapeno, seeded and finely chopped

Preparation

Step 1

Place tomatoes in a large bowl and stir in salt. Let stand at room temperature until tomatoes release their juices, 10-30 minutes. Add everything else and stir to combine
