Ingredients
- 2 cups heavy cream
- 3/4 cup sour cream or plain Greek yogurt
- 1 1/4 cups seedless blackberry preserves
- 2 teaspoons orange zest
- 1 11 ounce pkg. vanilla wafers
- 1 cup fresh blackberries
Preparation
Step 1
1.In a large bowl beat cream with a mixer on medium to high until stiff peaks form (tips stand straight). Fold in sour cream. In a small bowl combine 3/4 cup of the preserves and the orange zest; fold into whipped cream.
2.Spread 1 1/3 cups of the whipped cream into a 9-inch pie plate. Top with a single layer of cookies, 1 1/3 cups whipped cream, and remaining 1/2 cup preserves. Repeat layering cookies and whipped cream two more times. Cover; chill 8 to 24 hours.
3.Before serving, top with blackberries and, if desired, additional vanilla wafers.
