Ingredients
- 1 1/2 c all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp ground nutmeg
- 1 c sugar
- 1 c finely shredded unpeeled zucchini
- 1/4 c vegetable oil
- 1 egg
- 1/4 tsp finely shredded lemon peel or 1/4 tsp lemon juice
- Note: Double this recipe for large loaf pans

Preparation
Step 1
In mixing bowl, combine flour, cinnamon, baking soda, salt, baking powder and nutmeg. In another mixing bowl, combine sugar, shredded zucchini, oil, egg and lemon peel (lemon juice); mix well. Add flour mixture, stir just till combined.
Pour into greased loaf pans.
Bake 350 degrees for 55 - 60 minutes.
