Ingredients

  • 1 1/2 c all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp ground nutmeg
  • 1 c sugar
  • 1 c finely shredded unpeeled zucchini
  • 1/4 c vegetable oil
  • 1 egg
  • 1/4 tsp finely shredded lemon peel or 1/4 tsp lemon juice
  • Note: Double this recipe for large loaf pans

Preparation

Step 1

In mixing bowl, combine flour, cinnamon, baking soda, salt, baking powder and nutmeg. In another mixing bowl, combine sugar, shredded zucchini, oil, egg and lemon peel (lemon juice); mix well. Add flour mixture, stir just till combined.

Pour into greased loaf pans.

Bake 350 degrees for 55 - 60 minutes.
