Zucchini Cake

Ingredients

• 3 or 4 eggs
• 2 cups sugar
• 3 tsp. vanilla
• 1 cup oil
• 2-1/2 cups grated zucchini
• 1 tsp baking powder
• 2 tsp baking soda
• 2-1/2 cups flour
• 2-1/2 tsp cinnamon
• 1 tsp salt
• Optional: 1 cup chopped walnuts or raisons
• Optional: 1/4 cup chocolate chips

Preparation

Step 1

Mix the oil, eggs, sugar and vanilla together in a large bowl. Gradually add the dry ingredients to the mixture. Grease bundt pan or 10 inch tube pan. Bake at 350 for one hour
