Tomato-Basil Meatballs

Ingredients
- 1 lb ground beef chuck
- 1/4 cup grated parmesan
- 2 tbs chopped fresh basil
- 3 cloves garlic, minced, divided
- 1 egg, beaten
- 2 tbs olive oil
- 1 small onion shopped
- 1 15oz can diced tomates with basil and oregano
- 2 tbs tomato paste
- 1/2 tsp salt
- 1/3 cup thinly sliced fresh basil

Step 1
In a medium bowl mix beef, parmesan, chopped basil, 1 garlic clove and egg until well blended.
Shape into 24 meatballs - 1 tbs each.
Heat oil in a large nonstick skillet over medium heat.
Add meatballs; cook 5 - 7 minutes or until evenly browned, turning occasionally.
Add onion and remaining garlic; cook and stir 1 minute.
Increase heat to medium-high heat. Stir in tomatoes, tomato paste and salt. Reduce heat; cover and cook 4-6 minutes or until meatballs are throughly cooked.
Stir in sliced basil.
