Ingredients
- Loaf:
- 1 1/2 cups finely chopped celery
- 1 1/2 cups whole wheat bread crumbs
- 1 1/2 cups pecans, ground
- 3 tbsp minced onion
- 2 1/2 cups milk
- 3 tbsp chopped fresh parsley
- 1 tsp herb salt
- 3 eggs, well beaten
- 3 tbsp butter, melted
- Sauce:
- 4 tbsp butter
- 4 tbsp unbleached flour
- 2 cups milk
- 1 egg yolk
- 1/2 cup minced fresh parsley
- Dash white pepper
- 1/2 bay leaf
Preparation
Step 1
Mix all loaf ingredients and let stand for 20 minutes. Transfer to buttered loaf pan and bake in an oven preheated to 375 F for 45 to 50 minutes until browned. To prepare sauce, melt butter and stir in flour. Cook and stir and gradually add the remaining ingredients. Cook, stirring constantly, until thickened. Discard bay leaf and spoon sauce over each serving of the loaf.
