Warm spinach salad w/bacon & pecans

Ingredients

  • 1/2 Cups pecan halves
  • 6 Slices bacon
  • 1 Pint (2c) grape tomatoes
  • 1/3 Cup white wine vinegar
  • 1 Tbs sugar
  • 2-3 Bunches spinach
  • Salt & pepper

Preparation

Step 1

Preheat oven to 350

Spread pecans on a baking sheet & toast until golden. 10-15 mins
Set aside

In large skillet over med heat, cook bacon until brown & crisp. Transfer to paper towel. Pour off all but 3 tbs of fat. Add tomatoes, vinegar & sugar. Simmer until liquid thickens slightly 1-2 mins. Place spinach in large bowl & pour hot mixture over. Toss & season w/salt & pepper. Top w/nuts & bacon
