gluten free boneless pork ribs

Ingredients

  • 2 Tb olive or coconut oil
  • 2 pounds boneless pork ribs
  • 1 large onion, chopped
  • 2 small jalapenos or 1 green bell pepper, seeded, and chopped
  • 2 Tb gluten free light brown sugar1/4 tsp pepper
  • 1 18 oz jar gluten free barbecue sauce

Preparation

Step 1

Heat coconut oil in large pan. Add pork ribs and brown for 3 to 4 min, turning them once. Transfer ribs to plate and cover.
Add onion, jalapenos, br sugar, and pepper to pan. Cook over medium heat, 3 to 4 min till onion and peppers start to soften. Return pork ribs along with barbecue sauce to pot and reduce heat to slow simmer. Cover, and cook over low heat for 30 min, until ribs are tender. Enjoy!

(I put ribs and sauce in glass 9 x 13, covered it with tin foil , and put in oven at 275 for 3 - 4 hours----meat was VERY tender)
