Southern Corn and Banana Fritters

These fritters are a treat as a side dish to any Southern-style meal, or take them in a sweet direction for brunch by serving them with a drizzle of honey or a pat of strawberry butter on top.

  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup smashed bananas (about 1 banana)
  • 7-ounce can sweet corn, drained
  • 2 tablespoons canola oil, divided
  • Sour cream, to garnish

Preparation

Step 1

DIRECTIONS


In a medium bowl, whisk together the flour, baking powder and salt. In a small bowl, beat the egg until foamy then stir in the smashed banana. Stir the banana mixture into the dry mixture until incorporated. Stir in the corn.




Heat 1 tablespoon of oil in a large nonstick skillet over medium heat. Spoon 2 tablespoons of batter for each fritter onto pan. Fry until golden brown, about 2 minutes per side. Heat the second tablespoon of oil and fry a second batch.




Serve with a dollop of sour cream.
