Ingredients
- 2-1/2 lbs. carrots
- 1/2 cup mayonnaise
- 1 Tbls. minced onion
- 1 Tbls. horseradish
- Salt and pepper to taste
- 1/4 cup finely crushed saltines
- 2 Tbls. butter
- Parsley and paprika
- Cook carrots until tender. Reserve 1/4 cup of liquid. Cut carrots lengthwise in narrow strips and arrange in 9” square baking dish.
- Combine reserved liquid with mayonnaise, onion, horseradish, salt and pepper. Pour over carrots. Sprinkle crumbs on top. Dot with butter and sprinkle with parsley and paprika.
