Ingredients

  • 2-1/2 lbs. carrots
  • 1/2 cup mayonnaise
  • 1 Tbls. minced onion
  • 1 Tbls. horseradish
  • Salt and pepper to taste
  • 1/4 cup finely crushed saltines
  • 2 Tbls. butter
  • Parsley and paprika
  • Cook carrots until tender. Reserve 1/4 cup of liquid. Cut carrots lengthwise in narrow strips and arrange in 9” square baking dish.
  • Combine reserved liquid with mayonnaise, onion, horseradish, salt and pepper. Pour over carrots. Sprinkle crumbs on top. Dot with butter and sprinkle with parsley and paprika.
