Pineapple Cookies

These pineapple cookies are as easy to make as they are delicious!

Ingredients

• 2 eggs
• 1 cup shortening
• 1 cup brown sugar
• 1 cup white sugar or 1/2 cup honey
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon vanilla
• 1 cup crushed pineapple, drained well
• 4 cups flour

Preparation

Step 1

Mix all ingredients, saving the pineapple for last.

Drop onto cookie sheet with teaspoons.

Bake at 375° F for approximately 15 minutes.
