Pork Lo Mein
Ingredients
- 1/2 lbs boneless pork loin
- 2 1/2 cups sugar snap pea pods
- 1 1/2 cups baby-cut carrots, cut length-wise into 1/4" sticks
- 1/2 pkg (9 oz) refrigerated linguine, cut into 2" pieces
- 1/3 cup chicken broth
- 1 Tbsp soy sauce
- 2 tsp cornstarch
- 1 tsp sugar
- 2 tsp gingerroot, finely chopped
- 2-4 cloves garlic, finely chopped
- 2 tsp canola oil
- 1/2 cup thinly sliced red onion
- Toasted sesame seeds, if desired

Preparation
Step 1
1) Trim fat from pork.
2) Cut pork with grain into 2x1-inch strips; cut strips across grain into 1/8" slices.
3) Remove strings from pea pods.
4) In 3-qt saucepan, heat 2 qts water to boiling.
5) Add pea pods, carrots, & linguine; heat to boiling. Boil 2-3 minutes or just until pasta is tender; drain.
6) In small bowl, mix broth, soy sauce, cornstarch, sugar, gingerroot, & garlic.
7) In 12" nonstick skillet or wok, heat oil over medium-high heat. Add pork and onion; stir-fry about 2 minutes or until pork is no longer pink.
8) Stir broth mixture; stir into pork mixture.
9) Stir in pea pods, carrots, & linguine.
10) Cook 2 minutes, stirring occasionally,.
11) Sprinkle with sesame seeds.
