Crisp Chicken with Garlic

Ingredients

  • 6 garlic cloves
  • 1 1/2 T cracked black peppercorns
  • 2 t kosher salt
  • 1 C cilantro + 1 T for garnish
  • 2 T lime juice
  • 1 t crushed red pepper
  • 1 T olive oil + for drizzling
  • 4 boneless, skinless chicken breasts
  • 2 large tomatoes, cut into wedges
  • 1 callion, chopped
  • Pinch of sugar
  • Lime wedges for serving

Step 1

Preheat boriler. In food processor, pulse garlic with cracked & 2 t. kosher salt. Add 1 C cilantro, lime juice, crushed red pepper & 1 T olive oil & pulse til chunky paste forms. Rub paste all over chicken breasts. Transfer to baking sheet & let stand for 10 min.
Meanwhile, in med bowl, toss tomatoes with scallions & season with pinch each of sugar & salt. Drizzle with olive oil & toss well.
Season chicken with salt. Set in oven rack 5" from heat. Broil 6 min, then turn & broil 6 min. longer. Transfer to serving plates, garnish with cilantro & lime wedges & serve with tomatoes
