Creamed Cucumbers

  • 3 cucumbers, sliced thinly
  • salt
  • 1 c. half and half
  • 1/4 c. cider vinegar
  • 1/2 c. onion, thinly sliced



Step 1

Layer cucumber slices in a bowl; heavily salt each layer. Cover and let sit in fridge at least 4 hours.
Drain. Pour in enough half and half to almost cover, about 1 cup. Pour in cider vinegar, about 1/4c. or a little more. Add 1/2 c. onion.
