No-Bake Banana Energy Balls

Ingredients

  • 1 extra-ripe medium banana, peeled
  • 1/4 cup peanut butter
  • 1/4 cup chocolate chips
  • 2 tbsp honey
  • 1 1/3 cups natural wheat and barley cereal
  • 1/3 cup finely chopped peanuts

Preparation

Step 1

Mash banana, measure 1/2 cup. Combine banana, peanut butter and chocolate chips.

Heat honey in microwave for 15 seconds or until hot. Add to banana mixture; stir 30 seconds. Add cereal; mix well. Cover; set aside for 1/2 hour.

Form balls using 1 tablespoon mixture, then roll in peanuts. Stor in airtight container.
