Ingredients
- topping:
- 7 oz semi sweet chocolate
- 1/4 lb unsalted butter
- 7 eggs separated
- 1 cup sugar
- 1 t vanilla
- 1/8 cream of tartar
- chocolate shavings
- 1/2 pint whip cream (1 cup)
- 1/3 cup powdered sugar
- 1 t vanilla
- MAKE ONE DAY AHEAD
Preparation
Step 1
1. melt butter and chocolate on low heat.
2. in large bowl beat egg yolks and 3/4 cup sugar till light and fluffy (5 minutes). gradually beat in warm chocolate and vanilla.
3. in another large bowl beat egg whites and cream of tartar till peaks form. add 1/4 cup of sugar 1 T at a time. beat till stiff.
4. fold in egg whites carefully into chocolate mixture.
5. pour 3/4 batter into ungreased springform pan. refrigerate rest covered.
6. bake in 325 degree oven for 35 minutes.
7. make whipping cream. remove cake from oven and cool.
8. stir refrigerated batter to soften and spread on top of cake. refrigerate till firm. top sides and top with whipping cream and chocolate shavings.
