Oatmeal Macaroons

Ingredients
- 1 cup shortening
- 2 cups brown sugar
- 1 tsp vanilla
- 2 eggs
- 1 1/4 cups flour
- 1 tsp soda
- 1 tsp cinnamon
- 3 cups old-fashioned oats
- 1 to 2 cups coconut
Preparation
Step 1
Mix shortening and sugar. Add in vanilla and eggs, then add other ingredients. Mix well. Make them large, using at least 1/4 cup of dough. These spread out as they bake, so leave room.
Bake on a greased cookie sheet at 350 F for about 10 minutes. Time to bake depends on the size of the cookie and how done you want the cookies. I like them chewy so take them out when the center is still a little soft. My husband likes them best crisp all the way through.
