Ingredients
- 2 cucumbers, peeled, seeded, halved lengthwise, and chopped
- sea salt & pepper
- 6 Tbsp extra virgin olive oil
- 2 Tbsp lemon juice
- few leaves of fresh mint, chopped
- 1 Tbsp natural yogurt
Preparation
Step 1
1) Place cucumbers in large bowl. Season with salt & pepper.
2) Add extra-virgin olive oil & lemon juice. Mix well.
3) Toss mint into salad.
4) Add natural yogurt and toss until well coated.
5) Drizzle with a little extra-virgin olive oil and serve.
