Chicken Fajitas - Jamie Oliver's Version

Ingredients

  • 1 red bell pepper, cut into strips
  • 1 medium red onion, sliced
  • 2 skinless, boneless chicken breasts, sliced into small strips
  • 1 tsp smoked paprika
  • small pinch of ground cumin
  • 2 limes, cut in half
  • olive oil
  • sea salt & ground pepper
  • 4 tortillas
  • 1/2 cup sour cream
  • 1 cup guacamole
  • 4 oz Cheddar cheese
  • 1/2-1 fresh red or green chile, finely chopped
  • 15 ripe cherry or grape tomatoes, chopped
  • small bunch of fresh cilantro, chopped
  • sea salt & ground pepper
  • 1 lime
  • extra virgin olive oil

Preparation

Step 1

1) Put grill pan on high heat.
2) Combine bell peppers, onion, chicken, paprika, & cumin in medium bowl.
3) Squeeze over juice of 1/2 lime, drizzle lug of olive oil, season with pinch of salt & pepper, and mix well.
4) Set bowl aside to marinade for 5 minutes.
5) In second bowl (salsa), combine chile, tomatoes, juice of 1 lime, pinch of salt & pepper, lug of olive oil, and cilantro. Mix well and set aside.
6) Add bell pepper, onion, & chicken into preheated pan; cook for 6-8 minutes, until chicken is golden & cooked through. Turn frequently to prevent burning.
7) Warm tortillas up in microwave (15 seconds)
8) Before serving, squeeze remaining lime juice over hot pan.
9) Serve with tortillas, sour cream, guacamole, cheddar cheese & salsa from other bowl.
