Ingredients

  • Muffins:
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 egg, slightly beaten
  • 2 cups flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup of (blueberries or chocolate chips)
  • 1 tbsp cinnamon
  • Topping:
  • 1/4 cup melted butter
  • 1/4 cup sugar
  • cinnamon

Preparation

Step 1

Preheat oven to 375 deg F. Combine milk, egg and butter in a large bowl. Sift together flour, salt, sugar, baking powder and cinnamon. Add flour mixture to milk mixture and stir gently until just combined. Add chips or blueberries. Spray muffin pan with non-stick spray. Scoop batter into pan with 1/4 cup scoop. Bake for 20-22 minutes until golden brown. Let cool sightly. For topping, mix sugar with some cinnamon. Dip the muffins into the melted butter and then into the cinnamon sugar to create a sweet topping.
