Marinated Rotini and Three-Chese Salad

Ingredients

  • 1 pkg (16 oz) rotini
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded provolone cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sliced pitted black ripe olives
  • 1/2 cup chopped pepperoni (3 oz)
  • 1/4 lb salami, cut into 1/4" pieces (3/4 cup)
  • 1 small red onion, chopped
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup dry white wine
  • 1 tsp red wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp chopped fresh dill weed
  • 1/4 tsp pepper

Preparation

Step 1

1) Cook & drain pasta as directed on package. Rinse with cold water; drain.
2) To make Fresh Dill Vinaigrette, shake the following ingredients in tightly covered container: extra-virgin olive oil, white wine, red wine vinegar, salt, sugar, dill weed, & pepper.
3) Place pasta & remaining ingredients in large glass or plastic bowl.
4) Add vinaigrette; toss gently until evenly coated.
5) Cover & refrigerate at least 2 hours to blend flavors, but no longer than 24 hours.
6) Toss before serving.
