Cardamom Plum Cake

  • 1-1/2 c. AP Flour
  • 2/3 c. sugar
  • 2 t. baking powder
  • 1/2 t. salt
  • 1/2 c. cold, unsalted butter
  • 1 egg white
  • 1/4 c. skim milk
  • 1 t. vanilla
  • 1 t. cardamom (or cinnamon)
  • 4-5 large plums (about 1 lb.), thinly sliced
  • 3 T. sugar

Step 1

Preheat oven to 375 degrees.
Process flour, sugar, baking powder, salt, and butter in food processor until crumbly.
Add egg white, milk, and vanilla and process until dough forms a loose ball.
Lightly coat a 10" springform pan with cooking spray. Press dough evenly into pan, patting gently with moistened hands. Place plums in circles around center of dough. Stir together the 3 T. sugar and cardamom(or cinnamon), and sprinkle on top. Bake 50 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 10 min., remove pan sides. Serve warm or cool. Dust top with powdered sugar and serve wih Cardamom Ice Cream( 2pt. vanilla ice cream with 1t. cardamom mixed in).
