Patchwork Soup Mix

Ingredients

• 1 cup barley
• 1 cup dried split peas
• 3/4 cup uncooked white rice
• 3/4 cup dry lentils
• 2 tbsp dried parsley
• 2 tsp granulated garlic
• 1 tsp pepper
• 2 tsp salt
• 1 tsp garlic powder
• 2 tsp Italian seasoning
• 2 tsp dried sage

Preparation

Step 1

Layer the ingredients in the order given in a wide-mouth 1-quart canning jar. Pack each layer in place before adding the next ingredient. Attach a gift tag with cooking instructions that state: 1 jar Patchwork Soup Mix, I medium onion, chopped.

Place the soup mix in a large soup pot. Add 20 cups of water. Add onion. Bring to a boil. Cover, lower heat and simmer for 1 hour, stirring occasionally. Check after 30 minutes and add additional water if necessary.
