Ingredients
- 6 medium sweet potatoes
- 3 tbsp margarine, melted
- 1 cup orange juice
- 2 tsp grated lemon rind, optional
- 2 tbsp lemon juice
- 1 tbsp cornstarch
- 1/3 cup sugar
- 1/3 cup brown sugar, firmly packed
- 1/2 tsp salt
Preparation
Step 1
Scrub sweet potatoes and boil in skins until tender (about 30 minutes). Drain and peel. Cut in halves or 1/2-inch slices and arrange in greased baking dish. Combine remaining ingredients; cook, stirring until thickened. Pour over sweet potatoes; bake uncovered at 350 F for approximately 30 minutes.
