Old-Fashioned Apple Dumplings

  • Old-Fashioned Apple Dumplings:
  • 6 apples
  • 2 tsp baking powder
  • 6 tbsp butter or other fat
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup milk
  • Syrup:
  • 2 cups white sugar
  • 2 tbsp flour
  • Dash nutmeg
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 2 cups boiling water

Preparation

Step 1

Dumplings: Pare the apples and core them. Sift flour, measure and resift with baking powder and salt. Work in shortening. Add milk and stir until dry ingredients are well moistened. Turn out onto floured board, and knead slightly to make the dough smooth. Roll out to 1/4-inch thickness. Cut dough into squares. Place an apple in the center of each square and sprinkle with 2 tbsp sugar and a little nutmeg or cinnamon. Dampen edges of dough and press together around the apples. Place dumplings in a deep saucepan with the syrup.

Syrup: Combine sugars, flour, salt and nutmeg in the saucepan. Mix well. Stir in boiling water to make a smooth paste. Add butter. Place over low heat and simmer, stirring constantly until thickened and smooth. Place dumplings in hot syrup, cover tightly and bake in a hot oven, 425 F for about 30 minutes. Remove cover and baste dumplings with sauce occasionally. Continue cooking uncovered until dumplings are a golden brown. Serve in sauce in which they were cooked.
