Pineapple Pie

Ingredients
- Crust:
- One 9-inch tart crust, store-bought or homemade
- 1 tablespoon butter
- 3/4 cup white sugar
- 3 tablespoons cornstarch
- 1 (20 ounce) can crushed pineapple with juice
- 1 tablespoon lemon juice
- 2 tablespoons milk
- 1 tablespoon white sugar
Preparation
Step 1
Preheat the oven to 450 degrees F.
For the crust: Mold the tart crust into a 9-inch pie pan, cover with tin foil and then cover the foil with uncooked beans. Bake until the crust begins to brown, about 10-15 minutes. Once the crust is browned, remove from the oven and allow to cool. Remove the beans and foil, then spread the butter on the interior of the crust.
For the filling:
Preheat oven to 425 degrees F.
In a medium saucepan combine sugar, cornstarch, pineapple with juice, and lemon juice. Cook over medium heat, stirring constantly until thickened, then allow to boil 1 minute.
Cool slightly and pour mixture into pastry-lined buttered pie pan. Cover with top crust and seal. Make a few steam vents in crust, then brush with milk and sprinkle with sugar. Place in preheated oven and bake for 35 minutes. Serve chilled or at room temperature.
