Mashed Potatoes iwth Parmesan & Olive Oil

Ingredients

  • 6 medium baking potatoes (about 2 lbs)
  • 4 cloves garlic, peeled
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1 Tbsp fresh chopped parsley
  • 1 tsp chopped fresh chives

Preparation

Step 1

1) Peel potatoes, cut into large pieces.
2) Heat 1" salted water (1/2 tsp to 1 cup water) to boiling in 3-qt saucepan.
3) Add potatoes & garlic.
4) Cover and heat to boiling; reduce heat. Boil 20-25 minutes, or until potatoes are tender. Drain.
5) Shake pan with potatoes gently over low heat to dry.
6) Mash potatoes & garlic in medium bowl until no lumps remain.
7) Add remaining ingredients; beat vigorously until potatoes are light & fluffy.
