Ingredients
- 1/4 Cup dry white wine
- 1/4 Cup white wine vinegar
- 2 TBS. Finely chopped shallots
- 1/3 Cup heavy cream
- 1/4 tsp. Salt
- 1/8 tsp. White pepper
- 1 Cup cubed, chilled butter

Step 1
Boil wine, vinegar, and shallots until reduced to 2-3 TBS. Add cream, salt, and pepper. Boil and whisk for about 1 min. Turn heat to low and add cold butter ( it has to be cold) a few pieces at a time while whisking. Serve immediately.
