Ingredients

  • 2 Tbsp olive oil
  • 1 large yellow onion, diced
  • 2 green bell peppers, cored and diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/2 tsp paprika
  • 1/4 tsp ground cinnamon
  • 1 lb lean ground turkey
  • 1 can (14.5 oz) diced tomatoes
  • 2 Tbsp tomato paste
  • 1 jar (12 oz) roasted eggplant dip
  • salt and ground black pepper
  • 1/3 cup mozzarella cheese

Preparation

Step 1

1. In a large skillet, oven-safe skillet over medium-high heat, heat oil. Add onion, bell peppers, garlic, bay leaf, paprika, and cinnamon. Saute until onion is tender, about 5 mins.
2. Add ground turkey and cook until just browned, about 8 mins. Stir in diced tomatoes and tomato paste. Bring mixture to a simmer, cover the pan, reduce heat to low and cook for 10 mins.
3. Heat broiler. Stir roasted eggplant dip into the turkey mixture and simmer for another 5 mins. Remove and discard bay leaf. Season with salt and black pepper.
4. Remove pan from heat and top with moussaka with mozzarella cheese. Broil it for 1 to 2 mins, just enough to lightly brown the cheese.
5. Serve with warm pita bread or this dish is also great over rice.
