Vermicelli with Fresh Herbs

Ingredients

  • 1 pkg (16 oz) vermicelli
  • 1/4 cup olive oil
  • 1/4 cup pine nuts
  • 1 Tbsp chopped fresh parsley
  • 2 tsp chopped fresh rosemary leaves
  • 2 tsp chopped fresh sage leaves
  • 1 tsp chopped fresh basil leaves
  • 1 pint (2 cups) cherry tomatoes, cut into fourths
  • Freshly ground pepper

Preparation

Step 1

1) Cook & drain vermicelli as directed on package.
2) While vermicelli is cooking, mix oil, pine nuts, parsley, rosemary, sage, & basil in large bowl. Mix in tomatoes.
3) Add vermicelli to tomato mixture; toss gently until pasta is evenly coated.
4) Serve with pepper.
