Cheesy Sausage Zucchini Casserole

  • 1 c. uncooked rice
  • 2 c. water
  • 1 lb. pork sausage
  • 1/4 c. chopped onion
  • 1 c. diced fresh tomato
  • 4 c. cubed zucchini
  • 8 oz. sliced mushrooms (canned)
  • 8 oz. shredded cheddar
  • 1 pinch dried oregano
  • salt & pepper to taste

Cooking time 90mins


Step 1

Preheat oven to 325 degrees.
Cook rice in water, set aside.
Cook sausage and onion over med. heat, drain. Stir in zucchini and tomatoes, cook till tender. Stir in rice mushrooms, and cheese. Season with oregano, salt & pepper. Spread in 9x13 pan. Bake 1 hour.
