Heather's Guiness Stew
My mom's friend Heather is a native of Scotland. She was known for her fabulous parties and her wonderful cooking. Here is a recipe she gave to my mom after an exciting Scottish dinner party.
- 2 lb. sirloin or tenderloin, cubed
- 3 large onions, sliced
- 2 stalks of celery, chopped (1/2 inch pieces)
- 4 large carrots, chopped (1/2 inch pieces)
- 2 bottles Guiness beer
- 3 bay leaves
- Bouquet garnis
- 1/2 c. flour
- salt and pepper
Preheat oven to 375. Season flour with salt and pepper and coat meat in flour. In a Dutch oven over medium high heat, brown meat. Remove meat and set aside. Saute onions, carrots and celery. Put meat back in pot. Pour in Guiness. Add herbs, bay leaves, salt and pepper. Cover and bake in oven at 375 for 1 1/2 hours.
