Ingredients
- Optional:
- 4 cups frozen or fresh peas
- 1 tbsp extra virgin olive oil
- 2 tbsp chopped fresh mint or chives, if desired.
- Salt, to taste
- Pepper, to taste
- Plain Greek-style yogurt
- 1 tbsp extra virgin olive oil
Preparation
Step 1
Cook peas in salted boiling water in medium saucepan until tender, 3 to 6 minutes. Drain.
Mash hot peas with 1 tbsp extra virgin olive oil until somewhat crushed. Stir in chopped scallion greens and chopped fresh mint or chives, if desired. Season to taste with salt and pepper.
Dollop with plain Greek-style yogurt and drizzle with 1 tbsp extra virgin olive oil, if desired.
