Beef with Broccoli

One of my husband's most requested dinners. You can do many variations on this dish by adding and vegetables you like to the stir fry. A deliciously healthy dinner the whole family will love!

Ingredients
- 1 - 1 1/2 lb. lean, tender beef sliced in narrow strips
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 2 Tbsp. vegetable oil
- 1/4 tsp. salt
- 1 clove garlic, minced
- 2 c. broccoli pieces
- 1/4 lb. button mushrooms, sliced
- 1/2 tsp. salt
- 1/3 c. beef stock

Preparation
Step 1
Toss beef in cornstarch and soy mixture. In a large deep skillet or a wok, stir fry garlic in oil for 1 minute and add beef over high heat. Stir fry beef for 2-3 minutes until slightly browned. Add broccoli, mushrooms, salt and stock and bring to a boil. Reduce heat to a simmer, cover wok and cook for about 4 minutes. Remove cover and cook until sauce reduces and slightly thickens. Serve over steamed white or brown rice.
