Peach Pie

Ingredients

  • 2 cups flour
  • 1 tsp salt
  • 2/3 cup vegetable oil
  • 1/4 cup cold water
  • 5 cups sliced, peeled peaches (5-6)
  • 1 tsp lemon juice
  • 1/4 cup flour
  • 1/4 tsp cinnamon
  • 1 cup sugar
  • 2 Tbsp butter

Preparation

Step 1

1) Preheat oven to 425.

Crust:
2) Mix 2 cups flour, 1 tsp salt, vegetable oil & cold water.
3) Knead micxture and split mixture in half (makes 2 crusts).
4) Flatten each crust to make a crust. Line pie plate with one of the crusts.

Filling:
5) Toss peaches & lemon juice.
6) Sift sugar, flour & cinnamon.
7) Mix sifted ingredients with peaches.
8) Pour mixture into pastry-lined pie plate.
9) Dot with butter.

10) Cover with top crust. Slit, seal & flute crust.
11) Cover with aluminum foil on edges of crust to prevent burning.
12) Bake 30-40 minutes.
