Jicamas Radish and Scallion Salad with Lime Dressing

Ingredients
- 1 small head Boston or red-leaf lettuce
- 3-4 jicamas, peeled
- 1 bunch radishes, trimmed
- 2 bunches scaIlions
- 1/4 cup toasted pumpkin seeds
- Juice of 1 lime
- 1/2 cup olive or peanut oil
- Salt and pepper
- 1/4 cup chopped fresh cilantro

Preparation time: 10 minutes
Chill all the vegetables before assembling the salad. Line 4 salad plates with the lettuce leaves.
Cut the jIcama and radishes into very thin slices. Trim the root ends off the scallions and discard the dark green portions. Coarsely chop the remaining portions. Put the vegetables in a bowl and add the pumpkin seeds.
Combine the lime juice with the oil, and season with salt and pepper.
Toss the vegetables with the dressing and spoon equal portions onto the lettuce leaves on the plates. Garnish each with cilantro.
