Ingredients

  • 1 1/4 cups sugar
  • 2 Tbsp margarine, softened
  • 3 egg whites
  • 1 1/2 cups mashed ripe banana (3-4 medium)
  • 2/3 cup Yoplait Fat Free plain yogurt (from 2-lb container)
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 cups Total Whole Grain, slighly crushed

Step 1

1) Move oven rack to low position so that tops of pans will be in center of oven.
2) Heat oven to 350.
3) Brease bottoms only of two 8x4 loaf pans, or one 9x5 loaf pan with shortening.
4) In large bowl, mix sugar & margarine. Stir in egg whites until well blended.
5) Add bananas, yogurt, & vanilla; beat until smooth.
6) Stir in remaining ingredients except cereal just until moistened.
7) Stir in cereal. Pour mixture into pans.
8) Bake 8" loaves about 1 hour, 9" pans 1 1/4 hours, or until toothpick inserted in center comes out clean.
9) Cool 5 minutes.
10) Loosen sides of loaves from pans; remove from pans.
11) Cool completely; about 1 hour.
