This is my grandma's recipe for stuffed peppers. She loves to make them ahead of time and freeze them individually so she can pull them out for a quick meal anytime.

Ingredients

  • 1 small onion, diced
  • 1 egg
  • 3 green bell peppers
  • 2 c. cooked rice
  • 1 can tomato soup
  • 1 Tbsp. garlic powder
  • 1 Tbsp. ketchup
  • 1 lb. ground beef

Step 1

Preheat oven to 350. Saute onion in 1 Tbsp. margarine. In a large bowl, mix together ground beef, sauteed onion, cooked rice, egg, garlic powder and one Tbsp. tomato soup. Cut bell peppers in half horizontally. Stuff mix into pepper halves. Mix remaining tomato soup, ketchup and one can of water in the bottom of a Dutch oven. Place peppers in sauce and bake at 350 for two hours, basting occasionally.
