Almond buffet casserole

I use to make this about once a month. My husband cannot eat pork anymore . So I make it when I have the children for dinner.

Ingredients

  • 4 1/2 cups water
  • 2 envelopes dehydrated chicken noodle soup
  • 1 cup of rice
  • 1 lb of bulk pork sausage
  • 1 1/2 cups chopped celery
  • 1 medium size onion chopped
  • 1/2 cup chopped green pepper
  • 2/3 cup whole. BLaunched almonds

Preparation

Step 1

In large saucepan bring water and soup to boil. Add rice; cover, reduce heat and very. Gently boil
25 minutes or until all water is absorbed. Remove from heat. Fry sausage until browned ; remove meat from pan and pour off st of the fat. Add celery, onion Nd green pepper to remaining fat in pan and cook until tender-crisp. Add rice, cooked sausage and 1/2 cup of almonds to veges, mix well. Turn into 2 quart baking dish. Sprinkle remaining almonds over top. Bake at 350 for 30 minutes until heated through.
